These zucchini fritters are perfectly crispy on the outside and moist on the inside. They are delicious, nutritious and so easy to make. Eat them as is or top with smoked salmon, avocado and sour cream if you’re feeling fancy!

Ingredients (2 servings)

Zucchini Fritters:
1 large zucchini
1 egg
3 tbsp oat flour
30g shredded cheese
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp sweet paprika
1/4 tsp salt
1/8 tsp black pepper
-Cooking spray
Toppings:
-Smoked salmon
-Avocado
-Light sour cream
  1. Preheat the oven to 200°C / 400°F and lightly grease a nonstick baking sheet.
  2. Grate zucchini using a box grater.
  3. Place grated zucchini in a bowl and sprinkle with salt. Mix and leave for 5 minutes.
  4. Transfer zucchini to a clean tea towel. Wrap it up and squeeze out as much liquid as possible. Discard the liquid.
  5. In a large mixing bowl, mix together zucchini, egg, oat flour, shredded cheese and all the seasonings until combined.
  6. Take a large spoonful of mixture and shape into a patty with your hands. Repeat until all mixture is used.
  7. Arrange fritters in one layer on the greased baking sheet. Spray the top of each fritter lightly with cooking spray.
  8. Bake for 10 minutes, flip, then bake for 10 more minutes or until golden brown on both sides.
  9. Top zucchini fritters as desired and serve immediately. Enjoy!
Notes
  • Make sure you don’t skip the step to squeeze out all the liquid from the shredded zucchini as this is essential for getting crispy fritters!
  • If you like, you can also pan fry these zucchini fritters in a nonstick skillet.
  • You may omit the cheese or substitute with a plant-based alternative if you can’t take dairy.
  • You may substitute oat flour with any other all purpose flour.
  • Feel free to change up the toppings! Some other suggestions are: poached egg, sautéed spinach, ham, bacon etc.
