DESCRIPTION

This vegan chickpea burger is perfect for a wholesome meatless meal! Not only is it delicious, but it's also packed with plant protein and nutrients. Easy to make and bonus: it doesn’t fall apart!

INGREDIENTS

Chickpea burger patties

  • 400g canned chickpeas, drained
  • 1 small onion
  • 1 small carrot
  • 10g cilantro
  • 1 tbsp sriracha
  • 3 tbsp almond butter
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 80g oat flour

Other ingredients

  • 6 wholewheat burger buns
  • 2 heads baby cos lettuce
  • 1/2 red onion
  • 6 tbsp Sriracha
  • 6 tbsp aioli

INSTRUCTIONS

  1. Preheat oven to 200°C / 400°F and lightly grease a nonstick baking tray.
  2. Finely dice onion and grate carrot.
  3. Drain chickpeas and mash with a fork.
  4. Add all ingredients into a large mixing bowl and mix until well combined.
  5. Take 2 large spoonfuls of mixture and form a patty using your hands. Place on greased baking tray. Repeat until all the mixture is used up.
  6. Bake for 10 minutes, flip, then bake for 10 more minutes or until golden brown and cooked through.
  7. Meanwhile, prepare your burger toppings by washing and drying lettuce leaves and slicing red onion into thin rings. Also toast burger buns on a dry nonstick skillet.
  8. Assemble your burger: sandwich a chickpea burger patty, lettuce, red onion, sriracha and aioli between toasted wholewheat burger buns. Enjoy!

NOTES

  • Feel free to substitute cilantro with another herb to switch up the flavor profile of the patties.
  • Feel free to use any burger buns suitable for your dietary requirements eg. gluten-free.
  • Watching your carb intake? Forgo the buns and serve the chickpea patties with a delicious side salad instead.
  • Use whatever toppings you like! Some other ideas are: tomato slices, cheese, mashed avocado, alfalfa sprouts, sautéed bell peppers, pickled onion, chutney, jalapeño.
  • Not a fan of sriracha or aioli? Switch up the condiments! Tomato ketchup, bbq sauce, peri peri sauce are some other options.
