Cauliflower is all the rage these days! These crispy baked buffalo cauliflower bites are tangy, spicy and a delicious alternative to traditional wings. They're sure to be a hit with both vegans and meat lovers!

Ingredients (4 servings)

1 head cauliflower
70g almond meal
1 tsp garlic powder
2 tsp smoked paprika
1/2 tsp salt
1/2 tsp pepper
180ml almond milk
60ml hot sauce
1 tbsp olive oil

  1. Preheat oven to 230˚C/450˚F.
  2. Lightly grease a large baking dish.
  3. Cut cauliflower into florets.
  4. In a large mixing bowl, add almond meal, garlic powder, paprika, salt, pepper and almond milk. Mix well until combined.
  5. Add cauliflower florets into the bowl of batter. Toss until each piece of cauliflower is coated generously and evenly in batter.
  6. Transfer coated cauliflower to greased baking dish. Spray lightly with cooking spray. Bake for 20 minutes, flipping halfway.
  7. While cauliflower is baking, combine hot sauce and olive oil in a small bowl. When the 20 minutes are up, brush hot sauce mixture on the cauliflower, then bake for another 20 minutes. Watch them closely for the final 5 minutes to make sure they don't burn.
  8. Remove from oven and serve with your favorite dipping sauce. Enjoy!
Notes
  • Don't discard the cauliflower stem! You can cut it up and use it in stir fry's, stews or soups. Alternatively turn it into riced cauliflower in a food processor!
  • If you don't have almond meal you can substitute with gluten-free flour blend or plain flour.
  • I used almond milk but you can use your favorite plant based milk of choice.
